Easy Vegan Peanut Butter Filled Crunch Dates

The classic. The easiest but still incredibly indulgent vegan snack there is; peanut butter stuffed dates! I also added some unsweetened cornflakes to the mix because I love the crunch.

Dipped in chocolate and decorated they make the perfect easter chocolate egg alternative if you want to cut down on refined sugar! And they taste just as sweet as caramel, oh my.

Easy Vegan Peanut Butter Filled Crunch Dates

 

Ingredients:

  • a few tbsp of peanut butter (or any other nut butter you like!)

  • some medjool or sukkari dates (or just your favorite ones)

  • a handful of unsweetened cornflakes

  • a (generous) pinch of salt

  • some vegan dark chocolate

  • a tsp of coconut oil (optional)

Instructions: 

  1. Place your peanut or nut butter of choice into the freezer for about 1 hour prior to making the dates. This will make it a lot easier to fill the dates later on, as the nut butter will be less runny.

  2. Remove the pit from your dates and cut them halfway through, so that they form some sort of boat or cup for your nut butter filling.

  3. Add about 1/2-1 tsp of nut butter into each date and sprinkle over some salt and cornflake bits.

  4. Now place your filled dates into the freezer again while also melting the chocolate together with the coconut oil.

  5. Lastly, coat all of your dates with the chocolate and decorate them with some more unsweetened cornflakes, chopped nuts or anything else you like! Done!
