Super Crispy Vegan Rice Krispie Easter Nests

I love me a big weekend / holiday breakfast and these little easter nests are perfect if you want to do a little something extra for your easter holiday brunch table!

Super easy to make, they make for an adorable little breakfast side dish or can even be used as a little nest for your easter chocolates!

Vegan Rice Krispie Easter Nests

 

Ingredients:

for the Rice Krispie nests:

  • 45g light almond butter

  • 30g agave syrup

  • 30g puffed rice cereal

  • a pinch of salt

  • (optional: some matcha or cocoa powder, shredded coconut, cinnamon or any other additional ingredients you like!)

topping / filling ideas:

  • vegan yoghurt

  • fresh fruit (apples, pomegranate seeds, figs, banana, e.g.)

  • maple syrup

  • cocoa nibs / chocolate chips

  • vanilla pudding

  • rhubarb compote / jam

Instructions: 

  1. Preheat your oven to 150°C fan and combine all your ingredients for the nests in a bowl.

  2. Use silicone muffin cups or line a muffin tray with parchment paper and press the Rice Krispie mixture into the molds to form little nests.*

  3. Bake for only up to 3-5mins (be careful not to burn them!) and let them cool completely until they’ve hardened up.

  4. Then just remove the nests carefully from the muffin molds, fill with whatever you like and serve as a little extra cute breakfast side dish! Done!

 
 

Want to fill your Rice Krispie nests with something more decadent?

 

*Notes:

  1. The mix can be quite sticky and difficult to work with but I find that using a wet spoon works best to press it into the muffin molds!
