Vegan Strawberry Milk Boba

I don’t really know the reason why strawberry milk is so popular on social media right now, but that doesn’t mean I won’t be on board to join the hype! Creamy and subtly sweet plant milk with a hint of pastel pink strawberry and notes of vanilla - and all this glory on ice… I mean, what’s not to like here?

This vegan strawberry milk is therefore an absolute safe comfort beverage in my opinion. And just to spice things up a little bit, I also threw some sweet, syrup-y homemade tapioca pearls in there as well. And now here we are: vegan strawberry milk boba, everyone!

 
 

and now here comes the recipe for:

Vegan Strawberry Milk Boba

Ingredients (for 1 serving):

  • 30-50g cooked and sweetened tapioca pearls (you can find the recipe for my homemade tapioca pearls here!)

  • 1 glass oat milk (or plant milk of choice)

  • 1 tsp natural cashew butter*

  • 4-5 fresh strawberries

  • 1-2 dates (or sweetener of choice)

  • a pinch of vanilla

  • some ice cubes

Instructions: 

  1. To make the strawberry milk combine plant milk, cashew butter, vanilla, dates (or sweetener of choice) and 3 of the strawberries in a blender and blend until smooth.

  2. Chop up the remaining strawberries or mash them with a fork.

  3. Fill a glass with ice cubes, add the strawberries and tapioca pearls and pour over the strawberry milk. Optionally decorate the glass with another fresh strawberry and give everything a quick stir before drinking to make sure all components are coming together! Done!

Maybe I’m becoming an enthusiast for fun drinks after all.

 

*Notes:

  1. Cashew butter will give your strawberry milk an amazingly creamy and rich consistency, which pairs really well with the subtle sweetness of the strawberries and vanilla. If you don’t have any cashew butter on hand, you can always just use some raw cashews, preferably soaked in some water for a few hours or overnight. However if you’re allergic to cashews or don’t want to use them, you could also just choose a plant milk that is very creamy and rich itself as well.
